Let me start by saying that I feel very passionately about all things avocado. I know I am treading in basic white girl territory, but I can’t help who I am.

This post in particular, however, is written in defense of avocado toast. Recently it was referenced as the reason why millennials aren’t succeeding at life – but leave it to our generation to come quickly to its defense (and tear down the argument using clever Twitter posts and memes). However, as much as I love avocado toast, this recipe may come in handy instead of forking over $15+ dollars for a simple dish that can easily be made at home. Who says you can’t have your avocado toast and eat it too?

The key to this recipe is getting the toast super crispy (think cracker-like), as well as the fresh lemon flavor contrasting against the rich, fatty avocado & olive oil. Not to mention the kick from the red pepper flakes. This is simply ONE version of avocado toast, but has quickly become one of my favorites. I love putting a freshly fried egg on top, because – if I’ve learned anything from watching countless hours of Chopped – everything’s better with a perfectly runny yolk on top (you may or may not want to test that theory).

Avocado toast is an easy & healthy way to enjoy two of God's greatest creations.
Serves: 2
  • 2 slices of your favorite multigrain bread
  • 1 ripe avocado
  • ½ lemon
  • 1 tsp. olive oil
  • Red pepper flakes, as desired
  • Salt, to taste
  1. Start by getting the toast extra crispy - put your oven on broil, and broil each side of the bread for 2-3 minutes. Don't worry if it burns - just scrape those parts off. It will be better this way, I promise.
  2. Cut the avocado open and scoop into a bowl, then squeeze the lemon on top. Mash together (don't over mash) and then add salt to taste.
  3. Spread the avocado generously over the two slices of bread, and then drizzle with olive oil & sprinkle with as many red pepper flakes as you desire.
