maple mustard [life-changing, mind-blowing, man-pleasing] chicken

This post has been a long time coming. I tried this recipe a while ago, drawn in by the title of the recipe, “Man-Pleasing Chicken.” Turns out this chicken is not only man-pleasing; it is man-, woman-, and child-pleasing (I would hate to be exclusive). It’s actually hard to give this recipe a proper title, but take your pick from the many I gave it. You really can’t go wrong.

  • ~4 lbs chicken thighs (use breasts if you prefer white meat)
  • ½ cup dijon mustard
  • ½ cup regular mustard
  • ½ cup PURE maple syrup
  • 2 tbsp rice vinegar
  • Fresh rosemary
  • Salt & pepper
  1. Preheat oven to 450 degrees Fahrenheit. Line a 9×13 glass baking pan with foil, and place chicken thighs in pan. Salt & pepper thighs.
  2. Whisk together mustard, maple syrup, and rice vinegar in a small bowl. Pour half of the sauce over the thighs, turn them over, then cover with the rest of the sauce (make sure each side is thoroughly covered).
  3. Place in oven & cook for 20-25 minutes (30-35 if frozen), turning & basting chicken at the halfway point. You will be able to tell chicken is done when the juice runs clear. Pull from the oven & sprinkle with fresh rosemary. Let sit about 5 minutes, and serve. The sauce for this chicken is delicious, btw, so you should just slather it on top of your chicken, along with whatever else is on your plate.
